
Almond, Fennel and Orange Salad
Here’s a quick’n’simple, delicious, healthy and
nutritious salad your friends and family will enjoy,
especially in the spring and summer months.
What you need
- ½ cup whole Australian almonds
- 2 tablespoons white balsamic vinegar
- 4 tablespoons Australian olive oil
- 1 teaspoon Dijon mustard
- 1 cup of flat leaf parsley
- 2 fennel bulbs, sliced extra thinly
- 2 sweet oranges, peeled and segmented
- Salt and pepper to taste
How to prepare the salad
To make dressing place vinegar, oil and mustard in a
mixing jar and shake to combine. Toss fennel, orange
segments, parsley and almonds in a large mixing bowl.
Drizzle dressing over combined ingredients and add salt
and pepper to taste. Serve immediately.
