
Aussie recipe: Bush tomato chutney
The term bush tomato refers to the fruit or entire plants of certain nightshade (Solanum) species native to the more arid parts of Australia. While they are quite closely related to tomatoes (Solanum lycopersicum), they might be even closer relatives of the eggplant (S. melongena), which they resemble in many ways.
Ingredients
6 tomatoes
Sugar 2 cups
Bush tomatoes chopped ½ cup
2 Red onions chopped
1 clove garlic
1 granny smith apple
¼ cup sultanas
White vinegar to cover
Salt 1 teaspoon
Chili powder (optional) 1 dessertspoon
Corn flour as needed
Water as needed
Method
- Cut up tomatoes, garlic and onions and cover with white vinegar
- Add the rest of the ingredients except corn flour and water
- Boil then simmer for 1 hour until soft
- Thicken with the corn flour and water mixture
- Bottle while hot
Bush tomato is also known as Akudjura when it's dried and ground.
